Material & Structural Alteration to 17th Century Barley Store (Protected Structure), converting into Multi-Sensory Interactive Experience for Visitors to take them through the Medieval Origins of Brewing on the Site of the St. Francis Abbey Brewery.

Exhibits include a Hologram Monk welcoming you to the brewery in a monastery-like cavern, a recreation of the Old Smithwick’s Family Room with talking portraits, the modern day Brewhouse with large items of salvaged brewing equipment from the Smithwick’s Brewery just days after their final brew. There is also a new Tasting Bar and Retail Shop. Many traditional finishes are used throughout with areas like the shop using aged and distressed materials.
